Description

This chicken sautéed with cashews is a dish that I often prepare when I have little time but want something tasty and nutritious. The diced chicken, sautéed with fresh vegetables and crunchy cashews, creates a mix of truly inviting flavors and textures.   • Peas
  • Soy sauce
  • Celery
  • Champignon mushrooms
  • Cashews
  • Extra virgin olive oil
  • Chicken broth
  • Onions
  • Cornstarch
  • Water
  • Salt
  • Black pepper

Preparation (7 steps)

Preparation of the vegetables

Cut the celery into rounds, the champignon mushrooms in half (if too large) and the onions into cubes. Set aside.

Browning the chicken

Cut the chicken breast into cubes. In a pan, heat a drizzle of extra virgin olive oil and brown the chicken for 3 minutes, stirring continuously. Transfer the browned chicken to a bowl and set aside.

Cooking the vegetables

In the Mixtopf, pour 20 ml of extra virgin olive oil, add the diced onions and sauté for 3 minutes/120°C/Speed 1.

Adding the other vegetables

Add the celery rounds and the halved champignon mushrooms to the Mixtopf. Cook for 2 minutes/120°C/Speed 1.

Cooking with the chicken and peas

Add the browned chicken, peas, salt, black pepper and soy sauce to the Mixtopf. Mix gently with the spatula. Add the hot chicken broth and cook for 5 minutes/100°C/Speed 1.

Thickening the sauce

In a small bowl, mix the cornstarch with two tablespoons of water until you get a smooth batter. Pour the batter into the Mixtopf and cook for 10 minutes/100°C/Speed 1.

Final addition and serving

Add the toasted cashews to the Mixtopf and mix gently with the spatula. Serve immediately.
