Description

This slow-cooked stew is a traditional dish that comforts the soul, perfect for cold winter days. The combination of fresh vegetables such as carrots, potatoes, celery, parsnip, turnip and leek, together with pork osso buco and cooked chickpeas, creates a tasty and nutritious broth. I have been preparing it forever and they love it at home. Turmeric gives it a special touch and a beautiful golden color. It is ideal to prepare in advance and enjoy with the family. A complete and delicious dish that will transport you to grandma's kitchen!

Ingredients (13 ingredients)

  • 3 piece carrots
  • 2 piece medium potatoes
  • 0.33 piece celery
  • 1 piece parsnip
  • 1 piece turnip
  • 0.33 piece leek
  • 2 piece pork osso buco
  • 250 g Cooked chickpeas
  • 1 pinch Salt
  • 1 pinch Ground black pepper
  • 1 piece Vegetable stock cube
  • 1 bunch Parsley
  • 1 tsp Turmeric

Preparation (5 steps)

Prepare the base broth

Thermomix® Setting
10 min/212°F/Velocidad 1 212°F

Pour 1 liter of water into the Thermomix bowl. Add the crumbled vegetable stock cube. Program 10 Min./100°C/Speed 1 to dissolve the stock. If using ready-made vegetable stock, skip this step.

Chop the vegetables

Wash and peel the carrots, potatoes, parsnip and turnip. Wash the celery and leek. Cut all the vegetables into medium pieces. Set aside.

Add ingredients to the Thermomix

Add the chopped carrots, potatoes, celery, parsnip, turnip and leek to the Thermomix bowl. Incorporate the pork osso buco and 200 grams of previously washed cooked chickpeas.

Season and cook

Thermomix® Setting
180 min/208°F/Giro a la izquierda/Velocidad cuchara 208°F Reverse

Add salt to taste (approximately 2 teaspoons), chopped parsley to taste, a pinch of ground black pepper and 1 teaspoon of turmeric to the Thermomix bowl. Stir gently with the spatula to integrate all the ingredients. Program 180 Min./98°C/Reverse direction/Spoon speed.

Check and serve

Once the cooking time is finished, check that the potatoes and carrots are tender. If necessary, program a few additional minutes. Adjust salt if necessary. Serve hot.
