Description

This caramelized onion confit with star anise, prepared in the Thermomix®, is a vegetarian spread with onions, honey and balsamic vinegar. Preparation takes 40 minutes and yields 4 servings. Ideal as a spicy addition to breakfast, as finger food or with hearty appetizers. Especially suitable for the autumn and winter season.

Ingredients (6 ingredients)

  • 2500 g Onions
  • 5 EL Honey
  • 2 EL Olive oil
  • 8 EL Balsamic vinegar
  • 3 Stück Bay leaves
  • 2 Stück Star anise

Preparation (6 steps)

Prepare onions

Thermomix® Setting
5 sec/Speed 5

Peel 2500 g onions and quarter them. Place the quartered onions in the mixing bowl and chop for 5 sec./speed 5. If necessary, push down with the spatula and repeat the process.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 5 tbsp honey and 2 tbsp olive oil to the mixing bowl and sauté for 3 min./120°C/speed 1 without the measuring cup.

Caramelize onions

Add the chopped onions to the mixing bowl and sauté for 5 min./120°C/speed 1 without the measuring cup.

Deglaze and season

Thermomix® Setting
20 min/212°F/Speed 1 Linkslauf 100 Reverse

Add 8 tbsp balsamic vinegar, 3 bay leaves and 2 star anise to the onions in the mixing bowl and simmer for 20 min./100°C/speed 1 reverse without the measuring cup.

Season and remove spices

10 min/212°F/Speed 1 Linkslauf 100 Reverse

Simmer the onion marmalade for another 10 min./100°C/speed 1 reverse without the measuring cup. Then remove the bay leaves and star anise with a spoon.

Filling

Immediately pour the boiling hot onion marmalade into 4 hot rinsed preserving jars and close them.
