Description

This potato soup with leek and bacon is a real soul warmer! I especially like to make it in autumn and winter when it's cold outside. The leek gives the soup a fine spice, while the crispy bacon provides that certain something. The almonds give a slightly nutty note. Preparation in the Thermomix® is super easy and quick. A dash of black vinegar rounds off the taste perfectly. If you like, you can also serve the soup with a dollop of crème fraîche or fresh herbs. Simply delicious!

Ingredients (10 ingredients)

  • 500 g Potato(es)
  • 3 piece Leek(s)
  • 200 g Bacon
  • 2 piece Shallot(s)
  • 5 Zehe(n) Garlic clove(s)
  • 10 piece Almond(s)
  • Vegetable broth or chicken broth
  • Salt
  • Pepper
  • black vinegar

Preparation (7 steps)

Fry bacon

Cut the bacon into cubes and fry in a pan over medium heat until crispy. Remove the bacon from the pan and set aside. Leave the rendered fat in the pan.

Sauté shallots and leeks

Thermomix® Setting
15 min/212°F/Speed 1 100

Put the shallots in the mixing bowl and chop for 3 sec./speed 5. Add the bacon fat from the pan and sauté for 5 min./120°C/speed 1. Cut the leek into rings, add to the mixing bowl and cook for a further 15 min./100°C/speed 1, stirring occasionally.

Add garlic and almonds

Thermomix® Setting
1 min/212°F/Speed 1 100 Reverse

Put the garlic in the mixing bowl and chop for 3 sec./speed 7. Add the almonds and a pinch of salt and stir in for 1 min./100°C/speed 1 with reverse rotation.

Cook potatoes

Thermomix® Setting
25 min/212°F/Speed 1 100

Peel, dice and add the potatoes to the mixing bowl. Pour in the broth until the potatoes are covered. Add some water if necessary. Cook everything for 25 min./100°C/speed 1 until the potatoes are soft.

Puree soup

Thermomix® Setting
1 min/Speed 10

Set aside a few pieces of potato for garnish. Puree the soup for 1 min./speed 10. If the soup is too thick, add some water.

Season soup

Season the soup with salt and black vinegar and, if necessary, pass it through a fine sieve to obtain a particularly creamy consistency.

Serve

Serve the soup hot, garnish with the reserved potatoes, crispy bacon and a pinch of black pepper.
