Description

This aroma for the Colomba Pasquale is an absolute must for those who want to enhance their Easter cake with a touch of authenticity. I have been making this recipe for years and it always succeeds! The combination of candied oranges, lemon, honey and orange blossom water gives the cake an incomparable flavor. It is really easy to prepare and the short cooking time makes it a quick project. Ideal to enrich the Colomba Pasquale with a unique, homemade aroma. A little tip: The intensity of the aroma can be adjusted by the amount of lemon zest used.

  • Candied orange
  • Water
  • Sugar
  • Honey
  • Glucose syrup
  • Orange blossom water
  • Lemon zest
  • Vanillin
  • Salt

Preparation (4 steps)

Sugar and flavored water

Thermomix® Setting
20 sec/Speed 3

In the Thermomix bowl, pour the planned quantity of water, orange blossom water, salt and sugar. Mix for 20 Sec./Speed 3 until the sugar has completely dissolved.

Initial boiling

5 min/212°F/Speed 1 100

Transfer the aromatic liquid into a saucepan. Clean the Thermomix bowl. Pour the liquid into the bowl and cook for 5 Min./100°C/Speed 1, stirring gently.

Addition of aromatic ingredients

5 min/212°F/Speed 1 100

Add the honey, glucose syrup, candied orange peels, lemon zest (avoiding the white part) and vanillin to the liquid in the bowl. Cook for 5 Min./100°C/Speed 1, stirring gently.

Blend to obtain the puree

Thermomix® Setting
30 sec/Speed 8

Blend the mixture for 30 Sec./Speed 8 until a smooth puree is obtained. If a more grainy consistency is preferred, reduce the blending time.
