Delicious and tender lemon cookies, perfect for spring or winter.

100 g Icing sugar

100 g Desiccated coconut

Preparation (7 steps)
Prepare lemon
Rinse the lemon with hot water and pat dry. Finely grate the lemon zest and squeeze out the juice. Set both aside.
Prepare dough
Put lemon zest, 250 g margarine, 100 g icing sugar, 250 g cornstarch, 100 g flour and 100 g desiccated coconut into the mixing bowl and knead into a dough for 2 min./kneading stage.
Preheat oven
Preheat the oven to 200 °C (convection: 180 °C). Line baking sheets with baking paper.
Shape cookies
Using 2 teaspoons, place small heaps on the baking sheets lined with baking paper. The heaps can look a little wild.
Bake cookies
Place the baking sheets in the preheated oven and bake the lemon cookies for approx. 15 minutes. After baking, remove the cookies and let them cool on a wire rack.
Prepare lemon icing
Put 150 g icing sugar and 2-3 tbsp lemon juice into the mixing bowl and stir for 20 sec./speed 3.
Decorate cookies
Coat the cooled lemon cookies with the icing and sprinkle with 50 g desiccated coconut. The lemon cookies are ready.
