Description

This dish of potatoes battered in saffron sauce, known as 'Potatoes a la Importancia', is a traditional recipe with roots in Palencia. The combination of tender potatoes and a sauce rich in saffron and white wine creates a culinary experience that is comforting and full of flavour. I have been making this recipe for years and it is always a success at home. It is ideal for a hearty lunch or dinner, especially in the colder months. The preparation takes a little time, but the end result is worth it. Go ahead and try this delight!

Ingredients (11 ingredients)

  • 800 g Potatoes
  • 2 piece Eggs
  • 100 g Onion
  • 2 dientes Garlic cloves
  • 45 ml Extra virgin olive oil
  • 125 ml White wine
  • 0.5 g Saffron
  • 1 bunch Fresh parsley
  • 1 al gusto Salt
  • 500 ml Vegetable stock
  • 1 tbsp Flour

Preparation (9 steps)

Potatoes prepare

Peel, wash and cut the potatoes into slices approximately 1 cm thick. Season to taste. On a plate, place flour and on another, beat the eggs. Pass the potato slices first through flour and then through beaten egg. Set aside.

Fry the potatoes

In a pan with plenty of hot extra virgin olive oil, fry the battered potatoes until golden brown. Remove and place on absorbent paper to remove excess oil. Set aside.

Onion and garlic chop

Insert the onion into the bowl and chop 3 Sec./Speed 5. Remove and set aside. Insert the garlic cloves into the bowl and chop 3 Sec./Speed 7. Remove and set aside.

Prepare sauté

Add 30 ml of extra virgin olive oil to the bowl. Incorporate the chopped onion and sauté 3 Min./120°C/Speed 1.

Flour add

Add a tablespoon of flour to the bowl and sauté 1 Min./120°C/Speed 1.

Mashed add

Thermomix® Setting

Add the chopped garlic, saffron, chopped fresh parsley and salt to taste to the bowl. Mix 10 Sec./Speed 3.

Wine add

Thermomix® Setting
2 min/212°F/Speed 1 100

Add the white wine to the bowl and program 2 Min./100°C/Speed 1, without the measuring cup, to evaporate the alcohol.

Stock add

Thermomix® Setting
5 min/212°F/Speed 1 100

Add 500 ml of vegetable stock to the bowl and program 5 Min./100°C/Speed 1.

Potatoes add and cook

Thermomix® Setting
30 min/194°F/Gentle stir speed/Linkslauf 90 Reverse

Carefully place the fried potatoes in the bowl. Program 30 Min./90°C/Gentle stir setting/Reverse. Move carefully from time to time with the spatula.
