Description

This recipe for roasted nut granola from the Thermomix® is a healthy and vegan way to start the day. The main ingredients are banana, dates, almond butter, almonds and walnuts. Preparation takes about 40 minutes, of which 15 minutes are active working time. The recipe makes 12 servings and is ideal for a nutritious breakfast or as a crunchy topping for yogurt and berries.

Ingredients (12 ingredients)

  • 1 Stück ripe banana
  • 2 Stück dried soft dates
  • 50 g almond butter
  • 0.5 TL cinnamon powder
  • 120 g almonds
  • 100 g walnut kernels
  • 40 g pumpkin seeds
  • 60 g sunflower seeds
  • 50 g linseed
  • 100 g rolled oats
  • 50 g puffed amaranth
  • 50 g dried berries (e.g. goji berries)

Preparation (9 steps)

Preheat the oven and prepare the baking sheet

Preheat the oven to 180 °C. Line a baking sheet with baking paper.

Prepare banana and dates

Peel the banana and roughly dice. Roughly chop the dates.

Make banana puree

Place banana, dates and almond butter in the mixing bowl and purée finely.

Add cinnamon

Add cinnamon powder and mix in briefly.

Prepare nuts and seeds

Add almonds, walnuts and pumpkin seeds to the mixing bowl one after the other and chop roughly.

Mix muesli

Place chopped nuts and seeds, sunflower seeds, linseed, rolled oats and puffed amaranth in a bowl. Add the banana puree and stir well.

Roast muesli

Spread the mixture on the baking sheet and bake in the oven (fan oven not recommended) on the middle rack for about 25 minutes. Turn and mix several times with a wooden spoon so that the muesli roasts evenly.

Let the granola cool and add berries

Remove the granola from the oven and let it cool completely on the baking sheet. Mix in the dried berries.

Store granola

Fill the muesli into a storage container or freezer box and store in a dark and cool place. It will keep for up to 4 weeks and tastes great with natural yogurt or milk (alternatively with a plant-based drink) and fresh berries.
