Description

This creamy rice with salmon and peppers is a dish that I often prepare at home. It is a simple recipe, but full of flavour and very nutritious. The salmon, whether smoked or fresh, gives a special touch to the rice, and the peppers provide a sweetness that perfectly balances the whole. Ideal for a family meal or a weekend brunch. In addition, it is a healthy and balanced option, perfect to include fish in our diet. Go ahead and try it, you will love it! You can use bomba rice for a creamier result.

Ingredients (10 ingredients)

  • 1 cup rice
  • 1 trozo red pepper
  • 1 pieza green pepper (italian)
  • 4 dientes garlic
  • 2 piezas salmon loin (smoked or not)
  • 1 cup tomato (homemade or fried)
  • 1 cucharada sopera seasonings (turmeric, parsley, sweet paprika)
  • 5 tazas water
  • 1 pinch salt
  • 1 cup olive oil

Preparation (8 steps)

Prepare the salmon

Cut the salmon into small cubes, making sure to remove the skin and bones. Reserve the cut salmon.

Peppers and garlic

Cut the green pepper and red pepper into thin strips. Peel the garlic cloves and cut them into thin slices.

Sauté the garlic and peppers

Pour the olive oil into the Thermomix bowl. Add the garlic slices and sauté for 3 Min./120°C/Stufe 1. Then, add the green and red pepper strips and continue cooking for 2 Min./120°C/Stufe 1.

Seal the salmon

2 min/248°F/Speed 1/Linkslauf 120 Reverse

Add the salmon cubes to the Thermomix bowl and program 2 Min./120°C/Stufe 1/Linkslauf to lightly seal them. It is important to use the Linkslauf to prevent the salmon from falling apart.

Add the tomato and water

Add the fried tomato to the Thermomix bowl. Next, pour in the 5 cups of water (1200 ml).

Season the broth

Add the salt and the tablespoon of seasonings (turmeric, parsley, sweet paprika) to the Thermomix bowl. Mix 5 Seg./Stufe 3 to integrate the flavours.

Cook the rice

Thermomix® Setting
20 min/212°F/Speed 1/Linkslauf 100 Reverse

Pour the rice into the Thermomix bowl with the boiling broth. Program 20 Min./100°C/Stufe 1/Linkslauf. Do not stir during cooking.

Rest and serve

Once cooking is complete, let the rice with salmon rest inside the Thermomix for 5 minutes for the flavours to settle. Serve hot.
