Description

Vegan chocolate shortbread cookies are easy to prepare with the Thermomix®. This recipe for approximately 30 cookies uses dark chocolate, flour, sugar, and vegan margarine as its main ingredients. The preparation time is about 100 minutes, of which 20 minutes is active working time. Ideal as a vegan dessert, finger food, or for a winter coffee table. Especially suitable for those who love vegan cookies.

Ingredients (8 ingredients)

  • 100 g Dark chocolate (vegan)
  • 250 g Wheat flour Type 405
  • 120 g Sugar
  • 1 Pck. Vanilla sugar
  • 150 g Vegan margarine
  • 1 Prise(n) Salt
  • 0.5 TL Baking powder
  • 3 EL Soy milk

Preparation (5 steps)

Melt the chocolate

3 min/122°F/Speed 2 50

Break 100 g of dark chocolate (vegan) into pieces and place in the mixing bowl. Melt for 3 min./50°C/speed 2. Then transfer to a bowl and let cool slightly.

Prepare the dough

2 min/Kneading speed

Place 250 g wheat flour type 405, 120 g sugar, 1 packet of vanilla sugar, 150 g vegan margarine, 1 pinch of salt, 0.5 tsp baking powder and 3 tbsp soy milk in the mixing bowl. Knead for 2 min./kneading stage to form a dough.

Mix in the chocolate

Thermomix® Setting
30 sec/Speed 3

Add the melted and cooled chocolate to the dough in the mixing bowl and stir in for 30 sec./speed 3 until a marbled effect is created. If necessary, use the spatula to help.

Chill the dough

Remove the dough from the mixing bowl, shape into a ball and wrap in cling film. Place in the refrigerator for at least 1 hour.

Cut out and bake cookies

Preheat the oven to 180 °C. Roll out the dough on a floured work surface and cut out shapes with cookie cutters. Place the cookies on a baking tray lined with baking paper and bake for approx. 10-12 minutes.
