Description

This Thermomix® quinoa vegetable stir-fry is a quick, vegan main course with quinoa, vegetable broth, onions, black beans, and corn. Ready in just 45 minutes, the recipe yields 4 servings and is ideal for student cooking or a light, healthy meal. It's great for meal prepping and is gluten- and lactose-free. Preparation in the Thermomix® reduces the active working time to about 20 minutes.

Ingredients (19 ingredients)

  • 250 g Quinoa
  • 600 ml Vegetable broth
  • 1 Stück Onion
  • 2 Stück Garlic cloves
  • 1 EL Olive oil
  • 1 Dose Black beans
  • 1 Dose Corn
  • 4 EL Tomato paste
  • 500 ml Passata (sieved tomatoes)
  • 1 EL Apple cider vinegar or lemon juice
  • 1 EL Maple syrup
  • 0.25 TL Turmeric
  • 0.25 TL Cumin
  • 1 TL Hot paprika
  • 1 EL Sriracha sauce (chili sauce)
  • 0.25 TL Ceylon cinnamon
  • 0.75 TL Salt
  • Pepper
  • Fresh parsley

Preparation (6 steps)

Chop the onion

Peel and quarter the onion. Place the WunderSlicer V2 on the mixing bowl lid and insert the fine slicing disc. Place the onion in the WunderSlicer and chop. Set the chopped onion aside.

Chop the garlic

Peel the garlic cloves and place them in the mixing bowl.

Sauté the onions

Add olive oil and the chopped onions to the mixing bowl and sauté.

Add garlic and tomato paste

Add tomato paste and sauté briefly.

Cook the quinoa vegetable stir-fry

Add vegetable broth, passata, apple cider vinegar or lemon juice, maple syrup, turmeric, cumin, hot paprika, Sriracha sauce, Ceylon cinnamon, salt, pepper, quinoa, black beans, and corn to the mixing bowl and cook everything together.

Season and serve

Chop fresh parsley and stir in. Season the quinoa vegetable stir-fry to taste and serve.
