Description

This high-protein, lactose-free Asian Noodle Soup with Chicken is prepared in the Thermomix® and impresses with ginger, garlic, mushrooms and spring onions. The ramen noodles make the soup a filling main course. In about 50 minutes, a healthy meal for 4 people is created. Ideal for light cuisine or as a family meal.

Ingredients (14 ingredients)

  • 2 cm Ginger
  • 3 Zehen Garlic
  • 200 g Mushrooms
  • 3 Stück Spring onions
  • 4 Stück Eggs
  • 250 g Ramen noodles
  • 2 EL Sesame oil
  • 2 Liter Chicken broth
  • 2 EL Miso paste
  • 4 EL Soy sauce
  • 1 Stück Chicken breast fillet
  • 1 TL Sesame oil
  • 2 EL Soy sauce
  • 50 ml Chicken broth

Preparation (10 steps)

Chop ginger and garlic

Thermomix® Setting

Put 2 cm of ginger and 3 cloves of garlic into the mixing bowl and chop for 3 sec./speed 7. If necessary, push down with the spatula.

Prepare mushrooms

Quarter 200 g of mushrooms and cut 3 spring onions into rings. Set both aside.

Cook eggs

Cook 4 eggs in enough boiling water for 6 minutes until soft-boiled, then place in ice water until ready to use, so they stay nice and soft.

Prepare noodles

Let 250 g of ramen noodles steep in enough boiling water according to the package instructions until cooked, then drain.

Prepare chicken

Brush 1 chicken breast fillet with 1 tsp sesame oil, salt and pepper. Then place in a baking dish and add 2 tbsp soy sauce and 50 ml chicken broth. Bake for 20 minutes at 160 degrees convection, then cut into slices.

Sauté ginger and garlic

Put 2 tbsp sesame oil in the mixing bowl, add ginger and garlic and sauté for 3 min./120°C/speed 1.

Sauté mushrooms

Add the quartered 200 g of mushrooms and sauté for 2 min./120°C/speed 1.

Add broth and simmer

Thermomix® Setting

Pour 2 liters of chicken broth into the mixing bowl and simmer for 5 min./100°C/speed 1.

Add miso and soy sauce

Thermomix® Setting

Add 2-3 tbsp miso paste and 4 tbsp soy sauce and stir for 20 sec./speed 3.

Arrange

Divide the ramen noodles into bowls, then pour the broth over them. Garnish with halved eggs, chicken and spring onions and serve.
