Description

This spicy marinade is an absolute all-rounder! I have been using it for beef and game for a long time, but mushrooms can also be refined with it. The marinade makes the meat particularly tender and gives it a great aroma. The preparation is super easy and quick, but you should definitely plan for the marinating time of 4-5 hours. Perfect for a barbecue evening or as a base for a delicious wok dish. If you like it vegetarian, you can simply marinate and fry mushrooms. A real treat!

Ingredients (8 ingredients)

  • 2 tsp Ginger, freshly grated
  • 3 clove Garlic, finely chopped
  • 3 piece Spring onions, finely chopped
  • 125 ml Sesame oil
  • 4 tsp Sesame, roasted
  • 125 ml Soy sauce, light
  • 3 tbsp Honey or sugar
  • 1 tsp Pepper, black, freshly ground

Preparation (3 steps)

Chop ginger, garlic and spring onions

Put 2 tsp fresh ginger, 3 cloves of garlic and 3 spring onions into the mixing bowl and chop for 5 sec./speed 5. If necessary, scrape down the sides with the spatula.

Prepare marinade

Thermomix® Setting
20 sec/Speed 3

Add 125 ml sesame oil, 4 tsp roasted sesame, 125 ml light soy sauce, 3 tbsp honey or sugar and 1 tsp freshly ground black pepper to the chopped ingredients in the mixing bowl and mix for 20 sec./speed 3.

Use marinade

Cut beef or game into wafer-thin slices and then into bite-sized pieces again. You can also pound the slices beforehand to make them even thinner. Now add the prepared marinade to the meat, knead the mixture well and let everything steep for between 4-5 hours. This makes the meat nice and tender and spicy. Best fried in a wok. If you take large and somewhat thicker slices, you can grill them, they are then very quickly done. Let mushrooms soak in the marinade and then fry is a vegetarian option.
