Description

These Serbian bakery crescent rolls are an airy and soft yeast pastry, ideal for breakfast or brunch. With simple ingredients and the Thermomix®, the crescent rolls are made in no time. The preparation time is about 2 hours, including the rising time of the dough. The recipe yields about 13 pieces and is therefore perfect for the whole family or guests.

Ingredients (11 ingredients)

  • 500 g all-purpose flour
  • 7 g dry yeast
  • 1 TL sugar
  • 1.5 TL salt
  • 250 ml lukewarm milk
  • 50 ml oil
  • 1 Stück egg
  • 1 Stück egg
  • 1 EL milk
  • sesame seeds
  • flax seeds

Preparation (5 steps)

Activate Yeast

Put 250 ml lukewarm milk, 7 g dry yeast and 1 tsp sugar in the mixing bowl and mix for 2 min./37°C/speed 2. Then let rest in the mixing bowl for 10 minutes.

Prepare Dough

Thermomix® Setting

Add 500 g all-purpose flour, 1.5 tsp salt and 50 ml oil and 1 egg to the yeast mixture in the mixing bowl and knead for 3 min./kneading setting to form a smooth dough.

Let Dough Rise

Remove the dough from the mixing bowl, place in a bowl, cover and let rise in a warm place for about 45-60 minutes, until it has doubled in volume.

Shape Crescent Rolls

Divide the dough into two balls, roll out each ball into a circle on a floured work surface and cut into about 6-7 triangles. Roll up into crescent rolls from the wide side.

Brush and Bake

Place the shaped crescent rolls on a baking sheet lined with parchment paper. Whisk 1 egg and 1 tbsp milk and brush the crescent rolls with it. Sprinkle with sesame seeds or flax seeds as desired. Bake in a preheated oven at approx. 200°C (top/bottom heat) for approx. 15-20 minutes until golden brown.
