Description

This Brioche recipe for the Thermomix® is particularly easy to make with yeast, flour, butter, milk and sugar. Preparation in the Thermomix® takes a total of 180 minutes, with an active working time of around 30 minutes. The recipe makes 12 servings and is ideal for a festive breakfast or an extensive brunch. The Brioche belongs to the category bread and rolls and is a delicious yeast pastry.

  • 0.5 Würfel Yeast
  • 120 ml Milk
  • 3 EL Milk
  • 50 g Sugar
  • 0.5 TL Salt
  • 300 g Flour
  • 100 g Butter
  • 1 Stück Egg
  • 1 EL Milk
  • 150 ml Milk

Preparation (14 steps)

Prepare yeast

Crumble the yeast into a small bowl. Add 1 tsp of sugar and 3 tbsp of lukewarm milk and stir until the yeast has dissolved.

Heat milk

Thermomix® Setting

Pour the remaining milk (120 ml) into the mixing bowl and heat: 2 min./37°C/speed 1.

Add yeast mixture

Add the prepared yeast mixture to the warmed milk in the mixing bowl.

Add sugar, salt and flour

Add sugar (50 g), salt (1/2 tsp) and flour (300 g) to the mixing bowl.

Knead dough

Thermomix® Setting

Replace the standard blade with the Patix dough blade. Knead the dough for 3 min./kneading level.

Add butter

Thermomix® Setting
3 min/Kneading speed

Add the butter (100 g, in pieces) to the dough and knead for a further 3 min./kneading level.

Let the dough rise

Place the dough in a bowl, cover and leave to rise in a warm place for approx. 1 hour until doubled in size.

Shape dough

Briefly knead the dough again on a lightly floured work surface and divide into 12 equal pieces. Shape each piece into a ball.

Shape rolls

Place the dough balls in a greased or baking paper-lined baking tin (approx. 20x30 cm).

Let the rolls rise

Cover the rolls and let them rise for another 30 minutes.

Prepare egg wash

Whisk together the egg and milk (1 tbsp) in a small bowl.

Brush rolls

Brush the rolls with the egg wash.

Baking

Bake the rolls in a preheated oven at 180°C top/bottom heat for approx. 20-25 minutes until golden brown.

Prepare milk froth (optional)

Thermomix® Setting

For a creamy milk froth, add 150 ml of milk to the mixing bowl. Insert the Milkix instead of the mixing knife. Whisk for 2 min./70°C/speed 3.5.
