This noodle soup with poached egg is a comforting and quick dish to prepare, ideal for those cold days when you need something nutritious and simple. The base is a tasty broth, enriched with fine noodles and a poached egg that gives it a creamy and delicious touch. I often prepare it when I need a quick and nutritious meal. It is perfect for a light dinner or a comforting lunch. You can use homemade vegetable broth or a prepared one, both are great! A little dry parsley at the end enhances the flavor. Ingredients (5 ingredients)

  • 1 piece Broth from boiling the vegetables for the Russian salad
  • 1 pastilla Chicken broth
  • 1 pinch Whole sea salt with herbs of Provence
  • 1 piece Free-range egg
  • 4 puñados Very thin noodles

Preparation (4 steps)

Heat the broth and add the stock cube

Pour the vegetable broth into the Thermomix bowl. Add the chicken stock cube and program 5 Min./100°C/Speed 1.

Adjust the salt and add the noodles

Adjust the whole sea salt with Provençal herbs to taste. Add the very thin noodles and program 5 Min./100°C/Speed 1.

Add the egg and cook

Thermomix® Setting
3 min/194°F/Velocidad 1/Giro a la izquierda 90 Reverse

Carefully add the free-range egg to the bowl and program 3 Min./90°C/Speed 1/Reverse direction.

Serve the hot soup and sprinkle with a pinch of dried parsley.
