Description

This Caribbean fish stew is a vibrant and flavorful dish that's surprisingly easy to make with the Thermomix®. The combination of fresh lime, thyme, and a hint of rum creates a unique and delicious taste. I've been making this stew for years, and it's always a hit! It's perfect for a light yet satisfying meal, especially during the warmer months. The fish is tender and flaky, and the sauce is tangy and slightly sweet. Feel free to adjust the amount of spice to your liking. Serve it with rice or potatoes for a complete meal.

Ingredients (14 ingredients)

  • 2 piece limes
  • 1 piece skinned white fish
  • 2 piece lemons
  • 2 packet fresh thyme
  • 0.25 tsp white pepper
  • 1 tbsp dark rum
  • 3 tbsp vegetable oil
  • 1 piece onion
  • 1 handful fresh coriander
  • 2 clove garlic cloves
  • 1 piece beefsteak tomato
  • 2 tsp dark muscovado sugar
  • 1 shake bitters
  • 3 tbsp water

Preparation (9 steps)

Lime Preparation

Juice one lime and zest it. Pour the juice and scatter the zest into a shallow dish big enough to fit the fish in one layer. Swirl the juice around so it covers the entire surface of the dish.

Marinating the Fish

Lay the skinned white fish on top of the lime juice and pour over the juice of two lemons.

Thyme Paste Preparation

Strip the leaves off 2 x 15g packets of fresh thyme stalks. Add the thyme leaves, ¼ tsp white pepper, and a pinch of salt to a pestle and mortar and crush them to make a rough paste.

Applying the Marinade

Tip the thyme paste over the fish and gently massage it in, taking care not to break up the flesh at all. Pour 1 tbsp dark rum over and give it one last rub. Cover and leave to marinate out of the fridge for about 1 hour.

Preparing the Onions

Add 3 tbsp vegetable oil and 1 onion, cut into rings, to the Thermomix bowl and cook for 4 minutes/120°C/Stufe 1.

Adding Aromatics

Add a handful of fresh coriander, 2 garlic cloves, 1 beefsteak or 3 normal tomatoes (sliced), and 2 tsp dark muscovado sugar to the Thermomix bowl. Cook for 4 minutes/100°C/Stufe 1.

Cooking the Fish

Lift the fish from its marinade and nestle it in the Thermomix bowl among the onions and tomatoes. Pour over the marinade, 3 tbsp of water and a shake of bitters, if you are using it.

Simmering the Stew

Thermomix® Setting
8 min/212°F/Speed 1/Linkslauf 100 Reverse

Cover the Thermomix bowl and gently cook for 8 minutes/100°C/Stufe 1/Linkslauf until the fish flakes easily and the onions are softened but still have some bite to them.

Final Seasoning

Season with salt and pepper to taste. Squeeze over the remaining lime juice if desired. Serve with basmati rice or boiled potatoes and steamed vegetables.
