Description

This spicy avocado toast is a delightful twist on a classic breakfast. The creamy avocado salsa, brightened with lime and coriander, pairs perfectly with the cheesy, golden-brown eggy bread. I love how quickly this comes together – perfect for a weekend brunch or a quick and satisfying breakfast. The touch of red chili adds a lovely kick, but you can easily adjust the amount to your liking. It's a great way to start the day with a burst of flavor and energy!

Ingredients (8 ingredients)

  • 0.5 piece medium ripe avocado
  • 2 piece medium tomatoes
  • 1 tbsp chopped coriander
  • 0.5 piece lime
  • 2 piece large eggs
  • 2 slice thick slices sourdough
  • 15 g strong cheddar
  • 0.5 piece small red chilli

Prepare Avocado Salsa

Place ½ medium ripe avocado, 2 medium tomatoes, 1 heaped tbsp chopped coriander, and juice of ½ lime into a small bowl. Season generously with salt and pepper. Gently combine and set aside.

Whisk Eggs

In the mixing bowl, add 2 large eggs and a little seasoning. Whisk together for 10 Sec./Stufe 3.

Cook Eggy Bread

Heat a little oil in a non-stick frying pan over medium heat. Dip each of the 2 thick slices sourdough in the egg mixture, coating well. Put the slices in the pan and cook for about 2 mins on each side or until golden brown.

Grate Cheddar

Place 15g strong cheddar into the mixing bowl and grate for 5 Sec./Stufe 5.

Melt Cheese

Put the eggy bread on a baking sheet, sprinkle with the grated cheddar and put under a hot grill for 1 min to melt.

Top with the avocado salsa and ½ small red chilli (chopped) to serve.

The tomatoes add a juicy sweetness and a touch of acidity, while the coriander brings a vibrant, herbaceous note. The lime juice is crucial; it brightens the flavors, prevents the avocado from browning too quickly, and adds a zesty tang. The red chili, finely chopped, provides the heat. Use half a chili for a gentle warmth, or add more if you like it fiery. The sourdough bread provides a sturdy and slightly tangy base for all the toppings. Its thick slices are essential for soaking up the egg mixture without becoming soggy. Finally, the strong cheddar adds a sharp, savory element that complements the avocado perfectly. The Thermomix® plays a key role in two steps: whisking the eggs and grating the cheddar.
