Description

This salsiccia recipe is a hearty main course that is easy to prepare with the Thermomix®. The salsiccia is fried in a separate pan and then refined with an aromatic tomato sauce in the Thermomix®. Rounded off with Parmesan and butter, this dish is ideal for a hearty dinner. The preparation time is about 60 minutes and is sufficient for 4 servings.

Ingredients (17 ingredients)

  • 250 g Onions
  • 2 Stück Garlic cloves
  • 40 g Extra virgin olive oil
  • 20 g Tomato paste
  • 100 ml Dry red wine
  • 400 g Chopped tomatoes (canned)
  • 1 TL Sugar
  • 1 TL Salt
  • 0.5 TL Pepper
  • 0.5 TL Fennel seeds
  • 0.5 TL Chili flakes
  • 0.5 TL Smoked paprika powder
  • 1 Stück Bay leaf
  • 1 Stück Sprig of rosemary
  • 400 g Salsiccia
  • 20 g Butter
  • 30 g Grated Parmesan

Preparation (8 steps)

Chop onions and garlic

Put 250g onions into the mixing bowl and chop for 3 sec./level 5. Then add 2 cloves of garlic and chop for another 3 sec./level 7.

Sauté onions and garlic

Add 40g extra virgin olive oil to the chopped onions and garlic in the mixing bowl and sauté for 3 min./120°C/level 1.

Add and roast tomato paste

Add 20g tomato paste to the sautéed onions and garlic in the mixing bowl and roast for 2 min./120°C/level 2.

Deglaze with wine

Thermomix® Setting
3 min/212°F/Speed 1 212°F

Add 100ml dry red wine to the remaining ingredients in the mixing bowl and let it reduce for 3 min./100°C/level 1 without a measuring cup.

Add tomatoes and spices

20 min/212°F/Speed 1 212°F

Add 400g chopped tomatoes (canned), 1 tsp sugar, 1 tsp salt, 1/2 tsp pepper, 1/2 tsp fennel seeds, 1/2 tsp chili flakes, 1/2 tsp smoked paprika powder, 1 bay leaf and 1 sprig of rosemary to the mixing bowl and simmer for 20 min./100°C/level 1 with a measuring cup.

Fry salsiccia

Press the 400g salsiccia out of the skin and fry in a separate pan with a little olive oil until crumbly.

Add salsiccia and finish

10 min/212°F/Linkslauf Speed 1, 1 min/140°F/Linkslauf Speed 1 212°F, 140°F Reverse

Add the fried salsiccia to the mixing bowl and simmer for another 10 min./100°C/reverse rotation level 1 with a measuring cup. After the cooking time has elapsed, add 20g butter and 30g grated Parmesan and stir in for 1 min./60°C/reverse rotation level 1.

Season and serve

Season the dish with salt and pepper. Remove bay leaf and rosemary sprig. Serve with pasta.
