Description

This Asian vegetable stir-fry from the Thermomix® is a quick and healthy main course with broccoli, peppers, zucchini, eggplant and mushrooms. Preparation takes a total of 35 minutes, of which 25 minutes are active working time. The recipe is vegetarian, vegan and designed for 4 servings. Ideal for light cuisine or as a quick family meal.

  • 1 Stück Broccoli
  • 2 Stück Peppers (various colors)
  • 1 Stück Zucchini
  • 1 Stück Eggplant
  • 250 g Mushrooms
  • 1 Stück Onion
  • 2 Zehen Garlic
  • 2 EL Oil
  • 4 EL Soy sauce
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 2 EL Sesame
  • 250 g Rice

Preparation (5 steps)

Prepare vegetables

Divide broccoli into florets, cut peppers into strips, cut zucchini into slices, dice eggplant, halve or quarter mushrooms.

Chop onion and garlic

Put onion in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula. Add garlic and chop for 3 sec./speed 7. Push down with the spatula.

Sauté onion and garlic

Add oil and sauté for 3 min./120°C/speed 1.

Add vegetables and cook

Add the prepared vegetables (broccoli, peppers, zucchini, eggplant, mushrooms) to the mixing bowl. Add soy sauce and spices and cook for 15 min./100°C/reverse/speed 1.

Sprinkle the vegetable stir-fry with sesame seeds and serve with rice.
