Description

This Yaki Udon recipe is a quick and easy dish of Asian cuisine. The Udon noodles are prepared with vegetables and a delicious soy sauce. The dish is ready in about 35 minutes and is ideal as a main course. It is designed for one serving.

Ingredients (13 ingredients)

  • 100 g White flour
  • 0.5 TL Salt
  • 60 g Water
  • 1 TL Rapeseed oil
  • 1 Stück Onion
  • 1 Stück Garlic clove
  • 1 Stück Carrot
  • 1 Stück Nori sheet
  • 0.5 Stück Broccoli
  • Vegetable oil
  • 2 TL Soy sauce
  • 1 TL Sesame oil
  • 1 Stück Spring onion

Preparation (5 steps)

Prepare Udon noodle dough

Put 100 g white flour, ½ tsp salt, 60 g water and 1 tsp rapeseed oil into the mixing bowl and process with the Patix dough knife for 2 min./kneading level to form a smooth dough. Shape the dough into a slightly elongated shape, rub the surface with oil and roll out so that an elongated dough circle is created (approx. 3 mm thick). Fold the dough in the middle lengthwise once. Cut into individual noodles with a knife (approx. 3-5 mm wide). Pull the two ends apart so that individual noodles are created.

Cook noodles

Bring water to a boil in a large saucepan. Add the noodles to the boiling water, stir well once and wait until they rise to the surface of the water. Continue cooking for another 2-3 minutes, then pour off the water.

Prepare and fry vegetables

Quarter 1 onion, finely chop 1 clove of garlic, cut 1 carrot into fine strips, cut 1 nori sheet into small pieces and break ½ broccoli into individual florets. Put the onion in the mixing bowl and chop for 3 sec./level 5. Add vegetable oil and sauté for 3 min./120°C/level 1. Heat the remaining vegetables in a frying pan with a little oil and fry the vegetables in it for 6-7 minutes. Add a little oil again and again so that it does not burn. After a few minutes, pour in some water so that the vegetables soften faster.

Sauté onion

Add vegetable oil and sauté for 3 min./120°C/level 1.

Add noodles and sauce

Add the cooked noodles to the frying pan and fry for 3 minutes, turning them again and again so that they do not burn. Finally, add 2 tsp soy sauce and 1 tsp sesame oil and garnish with the chopped green of 1 spring onion.
