Description

These cranberry walnut crescents from the Thermomix® are a delicious pastry with spelt flour, butter, walnuts and cranberries. Ideal as Christmas finger food, for breakfast or as a dessert. The preparation takes a total of 180 minutes, the pure working time is about 45 minutes for 32 servings. The recipe is vegetarian and particularly suitable for lovers of nutty pastries in the winter time.

Ingredients (10 ingredients)

  • 160 g Spelt flour (Type 630)
  • 1 Prise(n) Salt
  • 120 g Butter (cold)
  • 120 g Double cream cream cheese (cold)
  • 80 g Walnut kernels
  • 160 g Cranberries sugared
  • 1 TL Cinnamon
  • 2 EL Sugar
  • 2 EL Ground hazelnuts
  • 1 Egg white

Preparation (10 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 160 g spelt flour, 1 pinch of salt, 120 g cold butter in small pieces and 120 g cold cream cheese into the mixing bowl. Knead for 2 min./kneading level to a smooth dough.

Cool dough

Halve the dough, flatten each half and chill wrapped in cling film for at least 2 hours.

Chop walnuts

Thermomix® Setting

Put 80 g walnut kernels into the mixing bowl and chop finely for 5 sec./level 5. Transfer.

Chop cranberries

Thermomix® Setting
5 sec/Speed 5

Put 160 g sugared cranberries into the mixing bowl and chop finely for 5 sec./level 5. Add to the chopped walnuts.

Mix filling

Mix chopped walnuts, chopped cranberries and 1 tsp cinnamon in a bowl.

Prepare sugar-nut mixture

Mix 2 tbsp sugar and 2 tbsp ground hazelnuts in a small bowl.

Roll out and brush dough

Sprinkle half of the sugar-nut mixture on the work surface. Roll out a cold dough into a circle about 2 mm thick and about 24 cm in diameter. Brush the dough thinly with egg white.

Preheat oven

Preheat the oven to 180 °C top/bottom heat.

Spread filling and form crescents

Carefully spread half of the cranberry-nut filling evenly on the circle of dough. Cut the circle into 16 equal pieces like a cake. Roll up pieces of dough firmly into crescents, starting from the wide side. Place seam-down on baking sheets lined with baking paper.

Baking

Bake the crescents for 20-25 minutes.
