Description

These hazelnut corners with chocolate glaze, prepared in the Thermomix®, are a delicious pastry with margarine, sugar, eggs, flour and hazelnuts. The apricot jam provides a fruity note under the chocolate glaze. The preparation takes about 90 minutes, of which 45 minutes are active working time. The recipe yields approx. 24 pieces and is perfect as finger food or dessert, especially during the Christmas season.

Ingredients (11 ingredients)

  • 125 g Margarine (at room temperature)
  • 200 g Margarine (at room temperature)
  • 125 g Caster sugar
  • 2 Päckchen Vanilla sugar
  • 2 Eggs
  • 300 g Flour
  • 1 TL Baking powder
  • 6 EL Apricot jam
  • 200 g Brown sugar
  • 400 g Grated nuts (e.g. hazelnuts and almonds mixed)
  • 200 g Chocolate glaze

Preparation (10 steps)

Stir margarine, sugar and vanilla sugar

Thermomix® Setting

Put 125 g margarine (at room temperature), 125 g caster sugar and 1 packet of vanilla sugar into the mixing bowl and stir for 30 sec./speed 4.

Add eggs and stir

Add 2 eggs and stir for 20 sec./speed 3.

Mix and stir in flour and baking powder

Mix 300 g flour and 1 tsp baking powder, add to the mixing bowl and stir in for 30 sec./speed 4. Use the spatula to push down from the edge and stir for another 10 sec./speed 4.

Spread dough on baking sheet

Remove the dough from the mixing bowl and press evenly onto a deeper baking sheet lined with baking paper.

Spread dough with jam

Spread the dough thinly with 6 tbsp apricot jam.

Prepare nut mixture

5 min/176°F/Speed 2 80

Put 200 g margarine, 5 tbsp water, 200 g brown sugar and 1 packet of vanilla sugar into the mixing bowl and heat for 5 min./80°C/speed 2 until the sugar has dissolved.

Stir in nuts

20 sec/keine/Speed 2 Reverse

Add 400 g grated nuts (e.g. hazelnuts and almonds mixed) and stir in for 20 sec./reverse/speed 2.

Spread nut mixture and bake

Spread the nut mixture on the jam layer and smooth it out. Preheat the oven to 180 °C (fan oven: 160 °C). Place the baking sheet in the preheated oven and bake for 30-35 minutes.

Cool and cut

Let the cake cool on the baking sheet. Then cut into nut corners, for example cut 3 horizontal and 5 vertical rows and halve the resulting pieces.

Prepare chocolate glaze and decorate nut corners

Prepare 200 g chocolate glaze according to the instructions on the packet. Dip the tips of the nut corners in the glaze and let them harden on baking paper.
