Description

This recipe for stuffed eggplants is an absolute treat! I like to make it when I have guests because it is easy to prepare and tastes incredibly delicious. The eggplants are filled with a spicy ground meat filling and baked in the oven until nicely softened. The combination of the tender eggplant flesh, the hearty ground meat and the creamy sauce is simply irresistible. Served with basmati rice, it is a perfect main course for the whole family. If you like, you can sprinkle some cheese on top - a poem!

Ingredients (17 ingredients)

  • 2 piece Eggplant(s)
  • 500 g Minced meat (ground beef) or mixed
  • 2 tbsp Rapeseed oil
  • 1 piece M.-sized onion(s)
  • 2 clove Clove(s) of garlic
  • 0.5 tsp Chili powder
  • 1 tsp Marjoram
  • 1 tbsp Parsley
  • to taste Salt
  • to taste Pepper
  • to taste Cayenne pepper
  • 1 piece M.-sized onion(s)
  • 1 tbsp Butter
  • 2 tbsp Tomato paste
  • 500 ml Vegetable stock
  • 200 ml Cream
  • to taste Cheese of your choice

Preparation (9 steps)

Prepare eggplants

Wash the eggplants, dry them and cut off the stalk. Halve the eggplants and hollow them out with a tablespoon. Lightly salt the inside of the eggplants and place the hollowed-out halves in an ovenproof dish.

Chop eggplant flesh

Put the hollowed-out eggplant flesh into the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Chop onion and garlic

Thermomix® Setting

Peel the onion, quarter it and put it into the mixing bowl together with the garlic cloves. Chop for 3 sec./speed 5. Push down with the spatula.

Prepare ground meat filling

Heat the oil in a pan and fry the ground meat in it. Add the chopped onion and garlic from the mixing bowl, as well as the chopped eggplant flesh, and fry. Season with salt, pepper, cayenne pepper, chili powder, marjoram and parsley and mix everything well.

Fill eggplants

Fill the ground meat filling into the hollowed-out eggplants.

Prepare sauce

Put the diced onion and butter into the mixing bowl and sauté for 3 min./120°C/speed 1.

Finish sauce

Add tomato paste, vegetable stock and cream and bring to the boil for 10 min./100°C/speed 2. Season sharply with marjoram, pepper, chili powder and salt.

Pour sauce over eggplants and bake

Carefully pour the sauce over the filled eggplants. If you like, you can put cheese of your choice on the eggplants. Bake in a preheated oven at 200 degrees for about 35 minutes.

Serve

Serve the filled eggplants with basmati rice.
