Description

This creamy spinach chicken is a comforting and flavorful dish that's perfect for a weeknight meal. I've been making this recipe for years, and it's always a hit with my family. The combination of tender chicken breasts, wilted spinach, and a rich cream sauce is simply irresistible. It's quick to prepare, making it ideal for busy evenings. Serve it over rice or potatoes for a complete and satisfying meal. You can easily adapt this recipe by adding other vegetables like mushrooms or bell peppers.

Ingredients (6 ingredients)

  • 30 g unsalted butter
  • 240 g baby spinach
  • 4 piece chicken breasts
  • 4 clove garlic cloves
  • 200 ml double cream
  • 40 g Parmigiano Reggiano

Preparation (4 steps)

Wilt the spinach

Melt half of the butter (15g) in a pan. Add the baby spinach (240g) and wilt for 2-3 minutes over medium heat. Season well. Remove to a colander to drain.

Cook the chicken

Melt the remaining butter (15g) in the same pan over medium heat. Fry the chicken breasts (4 pieces) for 1-2 minutes, stirring until lightly golden. Season well. Add the garlic cloves (4 pieces, minced) and fry for 1 minute more, then pour in the cream (200ml) and simmer for 15 minutes, stirring often until the chicken has cooked through – be careful not to let the cream boil.

Combine spinach and cheese

Stir in 30g of the cheese and all the spinach, squeezing out any excess liquid first. Simmer for another 5 minutes until the cheese has melted and the chicken is cooked through. To check the chicken is ready, pierce the thickest part of the meat to ensure the juices run clear.

Serve

Scatter with the remaining cheese (10g) and serve the chicken with plenty of the sauce, alongside rice or potatoes, if you like.
