Description

This apple curd casserole is a delicious dessert made with apples, curd and raisins. The casserole is easy to prepare and is ideal for a cozy evening. With a preparation time of approx. 45 minutes, it is quick to make and offers 4 servings. Perfect as a sweet main course or as a dessert after the meal.

  • 40 dag Apple
  • 2 EL Raisins
  • 0.01 Stück Rum
  • 1 Stück Untreated lemon
  • 0.25 kg Low-fat curd
  • 2 Stück Eggs
  • 3 EL Sour cream
  • 1 Prise Salt
  • 1 EL Breadcrumbs
  • 0.01 Stück Apple juice
  • 0.01 Stück White wine
  • 0.01 Stück Flaked almonds
  • 0.01 Stück Icing sugar

Preparation (13 steps)

Grate lemon zest and squeeze juice

Grate the lemon zest from an untreated lemon and squeeze out the juice. Set both aside.

Soak raisins

Soak 2 tbsp raisins in some rum for about 30 minutes and then drain.

Prepare apples

Peel 40 dag apples and cut into wedges.

Caramelize sugar

Put 1-2 tbsp icing sugar in a saucepan and caramelize without Thermomix.

Steam apple wedges

Deglaze the caramel with some white wine or apple juice and add the apple wedges. Do not steam the apple wedges until they are too soft!

Separate eggs and beat egg whites

Separate 2 eggs. Put the egg whites with a pinch of salt into the mixing bowl and whisk until stiff with the butterfly 3 min./speed 3.5. Transfer egg whites.

Prepare egg yolk mixture

Put the egg yolks with 4-5 tbsp icing sugar into the mixing bowl and whisk for 2 min./speed 3. Add 1/4 kg low-fat curd, 3-4 tbsp sour cream and lemon juice and stir until creamy for 30 sec./speed 3.

Mix in breadcrumbs

Add 1 tbsp breadcrumbs and stir in for 10 sec./speed 2.

Fold in egg whites

Carefully fold the egg whites into the egg yolk mixture.

Mix apple and raisins

Carefully mix the apple wedges and rum raisins.

Layer casserole

Grease a casserole dish. Distribute the apple wedges in it and spread the curd mixture on top. Sprinkle with flaked almonds.

Bake casserole

Bake the casserole at 180°C for approx. 20-25 minutes.

Serve

Sprinkle the casserole with icing sugar and serve warm. Serve with compote.
