Description

This parmesan crusted chicken is a simple yet delicious main course that's perfect for a weeknight meal. The chicken breasts are coated in a flavorful mixture of parmesan, mayonnaise, and herbs, then covered in crispy panko breadcrumbs for a satisfying crunch. I love how easy it is to prepare, and the oven does most of the work. Serve it with roasted vegetables or a fresh salad for a complete and balanced meal. It's a great way to add some excitement to your chicken dinners!

Ingredients (5 ingredients)

  • 40 g grated parmesan
  • 5 tbsp mayonnaise
  • 1 tbsp Garlic & herb flavour seasoning
  • 50 g panko breadcrumbs
  • 2 piece boneless, skinless chicken breasts

Preparation (6 steps)

Prepare the oven and baking sheet

Preheat the oven to 200°C/180°C fan/gas 6. Line a baking tray with baking parchment or oiled foil. Set aside.

Prepare the parmesan mixture

Thermomix® Setting
10 sec/Speed 3

Add 40g grated parmesan, 5 tbsp mayonnaise, and 1 tbsp garlic and herb flavour seasoning to the mixing bowl. Add a pinch of seasoning. Mix 10 Sec./Stufe 3 until well combined.

Prepare the breadcrumbs

Pour 50g panko breadcrumbs into a shallow dish and spread evenly.

Coat the chicken

Place the chicken breasts on a board and trim any fat. Blot well with kitchen paper. Slide one chicken breast into the parmesan mixture and coat all over. Pick it up and place on the breadcrumbs. Cover completely with crumbs and press them on gently. Place on the prepared baking tray. Repeat with the second breast.

Bake the chicken

Bake for 25-30 mins or until golden and cooked through (check the centre of the chicken with the point of a knife).

Serve

Transfer to a board and slice into three or four thick slices. Serve with chives and lemon wedges, roasted potatoes and tomatoes, if you like.
