Description

This hearty wild boar stew is an absolute highlight for the cold season! I especially like to make it in autumn and winter, when the game is particularly aromatic. The combination of savory wild boar, fruity apples and oranges, rounded off with red wine and cream, is simply unbeatable. The long cooking time makes the meat melt-in-your-mouth tender and the sauce incredibly creamy. A feast for the whole family or for special occasions like Christmas or New Year's Eve. It can also be prepared in advance!

Ingredients (14 ingredients)

  • 1200 g Wild boar goulash
  • Fat for frying
  • 2 Stück Onion(s), diced small
  • 2 Stück Small apples
  • 1 Stück Small orange(s) or tangerine
  • 200 ml Red wine
  • 200 ml Broth
  • 200 ml Cream
  • Salt
  • Pepper, black
  • Marjoram
  • Sugar
  • Juniper berry(ies)
  • Sauce thickener, if needed

Preparation (6 steps)

Chop onions

Place 2 onions, diced small, in the mixing bowl and chop for 5 sec./speed 5. If necessary, scrape down the sides with the spatula.

Fry the meat

Heat fat for frying in a pan. Season 1200 g of wild boar goulash with pepper and fry in batches. Add the chopped onions with the last batch.

Deglaze and add ingredients

Place the fried meat with the onions in the mixing bowl. Add 200 ml red wine and 200 ml broth. Crush juniper berries and add to the mixing bowl together with 2 small apples in eighths, 1 small orange or tangerine in slices, salt and marjoram to taste.

Cook goulash

Close the mixing bowl and cook for 60 min./100°C/speed 1.

Add cream and continue cooking

Add 200 ml cream to the mixing bowl and cook for another 30 min./90°C/speed 1.

Season and thicken

Season the wild boar stew with marjoram, salt, pepper and sugar to taste. If desired, thicken with sauce thickener as needed. To do this, stir for 10 sec./speed 3.
