Description

These yogurt-blueberry muffins are an absolute delight! I especially like to bake them in the summer when the blueberries come fresh from the market. The Greek yogurt makes the muffins wonderfully juicy and the vanilla rounds off the taste perfectly. They are ideal for a relaxed weekend breakfast or as a sweet surprise for afternoon coffee. The preparation is super easy and quick, so you can conjure up a small treat spontaneously. A must for all muffin lovers!

Ingredients (10 ingredients)

  • 200 g Blueberries (fresh or frozen)
  • 250 g Wheat flour type 405
  • 150 g Sugar
  • 2 tsp Baking powder
  • 0.5 tsp Cream of tartar baking powder
  • 1 Prise(n) Salt
  • 2 piece Eggs (size M)
  • 120 g Greek yogurt
  • 80 ml Sunflower oil
  • 1 tsp Vanilla extract

Preparation (7 steps)

Preheat oven and prepare muffin tin

Preheat the oven to 180 °C (top/bottom heat) and line a 12-hole muffin tin with paper liners. Wash fresh blueberries, drain and sort. Leave frozen berries in the freezer until ready to use.

Mix dry ingredients

Put 250 g wheat flour type 405, 150 g sugar, 2 tsp baking powder, 0.5 tsp cream of tartar baking powder and 1 pinch of salt into the mixing bowl and mix for 10 sec/speed 3.

Add liquid ingredients

20 sec/Speed 4

Add 2 eggs (size M), 120 g Greek yogurt, 80 ml sunflower oil and 1 tsp vanilla extract to the dry ingredients in the mixing bowl and mix for 20 sec/speed 4.

Fold in blueberries

Carefully fold 200 g blueberries (fresh or frozen) into the dough with a spatula.

Fill dough into muffin tin

Spread the dough evenly over the prepared muffin tin.

Bake muffins

Place the muffin tin in the preheated oven and bake for 20–25 minutes until golden brown. If a toothpick inserted into the center of a muffin comes out clean, they are done.

Let muffins cool

Remove the muffins from the oven and let them cool on a wire rack. After cooling, dust with powdered sugar and serve.
