Description

Savory bread sticks with cheese and ham are a hearty snack from the Thermomix®, ideal for parties or as finger food. The recipe is based on wheat flour, yeast, diced ham, and Gouda. Preparation takes about 90 minutes and yields 6 servings. Suitable as a savory side dish, appetizer, or small main course for the whole family.

Ingredients (13 ingredients)

  • 500 g Wheat flour Type 405
  • 42 g fresh Yeast
  • 1 EL Sugar
  • 250 ml Water
  • 1 EL Olive oil
  • nach Geschmack Salt
  • 375 g diced Ham bacon
  • 375 g grated Gouda cheese
  • 500 g Sour cream
  • 1 Stück Lemon
  • nach Geschmack Pepper
  • 1 Bund Chives
  • 0.5 Bund Spring onions

Preparation (10 steps)

Prepare yeast pre-dough

Put 500 g Wheat flour Type 405 in a bowl and press a hollow in the middle. Crumble 42 g fresh Yeast into it, add 1 tbsp Sugar and stir with some of 250 ml Water and Flour from the edge to form a pre-dough. Cover and let rise in a warm place for about 15 minutes.

Knead yeast dough

Thermomix® Setting

Add remaining Water (from 250 ml), 1 tbsp Olive oil and Salt to the mixing bowl. Add the pre-dough and knead for 2 min./kneading level to form a smooth yeast dough.

Let the yeast dough rise

Cover the yeast dough and let it rise in the oven at 50 °C for approx. 30 min.

Fry Ham bacon

Fry 375 g diced Ham bacon crispy in a pan without oil and then let it cool.

Portion and top the dough

Knead the yeast dough briefly again and divide into three equal pieces. Roll out each piece of dough into a approx. 10 x 35 cm large flatbread and sprinkle each flatbread with 125 g Bacon and 125 g grated Gouda in the middle.

Shape bread sticks

Fold the long sides over the filling, fold in the ends and place the strands with the seam down on a baking sheet lined with baking paper.

Let the bread sticks rise again

Let the formed bread sticks rise again in the oven at 50 °C for about 10 minutes.

Prepare herb sour cream

Thermomix® Setting

Put 500 g Sour cream, juice of 1 Lemon, Salt and Pepper in the mixing bowl and stir for 10 sec./speed 3. Then transfer.

Chop herbs

Thermomix® Setting
3 sec/keine/Speed 5

Wash, clean 1 bunch Chives and 0.5 bunch Spring onions and put in the mixing bowl. Chop for 3 sec./speed 5. Add to the sour cream and stir.

Bake bread sticks

Bake the bread sticks in a preheated oven (convection: 175 °C) for about 20 min. Serve with herb sour cream.
