Description

This lemon pudding is a fresh and light dessert, perfect to conclude a meal with a citrus note. Its velvety texture and delicate flavor make it irresistible. Preparing it with the Thermomix® is child's play! I love it because it is lactose-free, so suitable for everyone. Potato starch gives it a unique creaminess, but it can be replaced with corn or rice starch. Ideal for a delicious snack or a light end of meal, this pudding is ready in no time and keeps well in the refrigerator. Try it, it will win you over!

Ingredients (6 ingredients)

  • 500 ml lactose-free milk
  • 100 g sugar
  • 50 g potato starch
  • 2 uova eggs
  • 20 ml lemon juice
  • 1 scorza lemon zest

Preparation (5 steps)

Eggs and sugar in the bowl

Break 2 eggs into the Thermomix bowl and add 100 g of sugar. Mix for 20 Sec./Stufe 4.

Adding lemon juice and starch

Add 20 ml of lemon juice and 50 g of potato starch to the bowl. Mix for 20 Sek./Stufe 4.

Milk and lemon zest

7 min/194°F/Speed 2 90

Add 500 ml of lactose-free milk and 1 lemon zest to the bowl. Cook for 7 Min./90°C/Stufe 2.

Final cooking of the pudding

Thermomix® Setting
3 min/194°F/Speed 2 90

Cook for another 3 Min./90°C/Stufe 2. Make sure the pudding thickens. If necessary, prolong cooking for 1-2 minutes.

Cooling and resting

Pour the pudding into 4 individual bowls. Allow to cool at room temperature, then cover with transparent film and refrigerate for at least 2 hours before serving.
