Description

These iced cucumber bites are a refreshing and tangy treat, perfect for a hot summer day. I've been making these for years, and they're always a hit at picnics and barbecues. The combination of sweet and sour is simply irresistible. The cucumbers and onions are softened in a salty brine, then coated in a sweet vinegar mixture and frozen to perfection. They're so easy to make and require minimal effort, making them ideal for a quick and tasty snack. These are vegetarian and can be made ahead of time, making them perfect for meal prep.

Ingredients (5 ingredients)

  • 8 cups peeled and sliced cucumbers
  • 1 piece small onion, sliced
  • 2 tablespoons salt
  • 1.5 cups white sugar
  • 0.5 cups white vinegar

Prepare the cucumber and onion mixture

Peel and slice 8 cups of cucumbers. Slice 1 small onion. Combine the cucumbers, onion, and 2 tablespoons of salt in a bowl filled with water. Refrigerate for about 2 hours until the vegetables are softened. Drain the water completely.

Prepare the sugar and vinegar mixture

Combine 1 ½ cups of sugar and ½ cup of vinegar in the Thermomix bowl. Cook for 5 Min./100°C/Stufe 1 until the sugar is dissolved.

Cool the liquid

Remove the sugar and vinegar mixture from the Thermomix bowl and allow it to cool to room temperature.

Combine and freeze

Pour the cooled sugar and vinegar liquid over the cucumber mixture. Stir to combine. Transfer the mixture to a freezer-safe container and freeze for 1 to 2 hours, or until frozen.
