Description

This venison goulash is an absolute highlight for the cold season! I've been making it for years and it's always a hit. The tender venison, the aromatic sauce and the homemade Spätzle are simply an unbeatable combination. The preparation takes a little while, but the effort is definitely worth it. Perfect for a festive meal with family and friends. The goulash can also be prepared well in advance and tastes almost even better when reheated. A hearty dish that warms body and soul!

Ingredients (14 ingredients)

  • 1000 Gramm Haunch of venison
  • 750 Milliliter Beer
  • 3 Stück Vegetable onions
  • 6 Stück red bell pepper
  • 1 Teelöffel Sugar
  • 1 Esslöffel Olive oil
  • 2 Stück Garlic cloves
  • 2 Esslöffel Paprika powder, mild
  • 1 Esslöffel Paprika powder, hot
  • 1 Esslöffel Tomato paste
  • 2 Teelöffel Salt
  • 1 Teelöffel Pepper
  • cold Butter, for thickening
  • 500 Gramm Spätzle

Preparation (7 steps)

Prepare vegetable onions, pepper and garlic

Peel and quarter the vegetable onions. Clean, core and cut the bell pepper into coarse pieces. Peel the garlic cloves. Put everything together in the mixing bowl and chop for 5 sec./speed 5. If necessary, push down with the spatula.

Sauté vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the olive oil to the chopped vegetables in the mixing bowl and sauté for 3 min./120°C/speed 1.

Sauté tomato paste and add spices

Thermomix® Setting
1 min/248°F/Speed 1 Linkslauf 120 Reverse

Add the tomato paste, mild paprika powder, hot paprika powder, salt, pepper and sugar to the vegetables in the mixing bowl and sauté for 1 min./120°C/speed 1 with reverse.

Add meat and beer

Add the seared venison (DO NOT sear in the Thermomix!) and the beer to the mixing bowl.

Simmer goulash

Thermomix® Setting
150 min/212°F/Speed 1 Linkslauf 100 Reverse

Close the mixing bowl and let the goulash simmer for 150 min./100°C/speed 1 with reverse. If necessary, add some water if the liquid reduces too much.

Thicken goulash

Thermomix® Setting
1 min/212°F/Speed 2 Linkslauf 100 Reverse

Add the cold butter in small pieces to the goulash in the mixing bowl and stir in for 1 min./100°C/speed 2 with reverse until the sauce has reached the desired consistency.

Season and serve

Season the goulash with salt and pepper and serve with freshly cooked Spätzle. The Spätzle are NOT prepared in the Thermomix.
