Description

This kielbasa and sauerkraut casserole is a hearty and flavorful dish, perfect for a cold winter evening. I've been making this recipe for years, and it's always a hit with my family. The combination of the tangy sauerkraut, sweet apple, and savory kielbasa is simply irresistible. It's a great way to use up leftover kielbasa, and it's also easy to customize with your favorite spices. The caraway seeds add a lovely aroma, and the brown sugar balances the acidity of the sauerkraut. This dish is ideal for a casual weeknight dinner or a festive holiday gathering.

Ingredients (8 ingredients)

  • 2 pounds sauerkraut, rinsed and drained
  • 1 tablespoon caraway seeds (Optional)
  • 0.25 cup brown sugar
  • 1 piece apple, diced
  • cooking spray
  • 0.5 pounds bacon, cut into 1-inch pieces
  • 1 piece large onion, chopped
  • 1.5 pounds kielbasa sausage, cut into 1-inch thick slices

Cook Bacon and Onion

Cut the bacon into 1-inch pieces. Chop the large onion into smaller pieces. Heat a skillet over medium heat. Add the bacon and onion to the skillet and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut.

3

Brown Kielbasa Sausage

Cut the kielbasa sausage into 1-inch thick slices. Brown the kielbasa sausage in the remaining bacon grease in the same skillet until the sausage begins to brown, 10 to 15 minutes. Stir into the sauerkraut mixture.

4

Combine and Bake

Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish. Spoon the sauerkraut and sausage mixture into the prepared baking dish. Bake in the preheated oven until bubbling, about 1 hour.
