Description

These Swabian Carnival Cakes are a traditional pastry for the winter time. The dough is prepared with wheat flour, milk, eggs and butter and then baked in hot fat. The cakes are a delicious dessert and are perfect for New Year's Eve.

Ingredients (10 ingredients)

  • 550 g Wheat flour Type 405
  • 110 g Sugar
  • 250 ml Milk
  • 1 tsp Salt
  • 1 cube Fresh yeast
  • 2 piece Eggs
  • 80 g Butter
  • 1 tsp Honey
  • 750 g Vegetable fat (highly heatable)
  • Sugar, cinnamon, vanilla sugar

Preparation (9 steps)

Heat milk

Heat 250 ml milk in a cup in the microwave and pour into a large mixing bowl. Swivel the milk in the bowl to warm the bowl and pour the milk back into the cup.

Dissolve yeast

Crumble 1 cube of fresh yeast in a small cup and add 1 tsp of honey and 2-3 tbsp of the hot milk so that the yeast dissolves.

Prepare flour

Put 550 g wheat flour type 405 in the warm bowl and make a hollow in the middle.

Prepare dough

Add the remaining ingredients (110 g sugar, 1 tsp salt, 2 eggs, 80 g butter, the dissolved yeast) to the hollow and knead with the Meistermix Patix dough knife for 2 min./kneading stage to form a dough.

Knead dough

The whole thing is then mixed first on a low level, then higher, gradually with the hand mixer. Finally, I knead the dough well by hand, if necessary you have to add some flour so that the dough separates nicely from the bowl and the hands and nothing sticks.

Let dough rise

Put the lid on the bowl and put it in a warm place. The dough bowl is, for example, also in good hands under the blanket. Let the dough rise like this for at least 1 hour or even longer.

Prepare dough

Prepare the dough and then let it rise for a few more minutes.

Heat fat

Heat 750 g vegetable fat (highly heatable) in a pot until it is really hot. When the first cakes are baked, reduce the heat from my 9 levels to level 6, otherwise they will get dark too quickly.

Bake cakes

Depending on the size of the pot and cake, slowly slide the cakes into the pot and be careful not to burn yourself on the hot fat. The cakes will then inflate during the frying process. When they are golden yellow, turn them and bake the other side as well. Then drain well on a kitchen crepe and then turn warm in the sugar-cinnamon mixture.
