  • 1.25 kg Rhubarb
  • 650 g Flour
  • 300 g Sugar
  • 420 g Butter
  • 4 Stück Eggs (Size M)
  • Salt
  • 2 TL Baking Powder
  • Powdered Sugar

Preparation (9 steps)

Prepare baking sheet

Grease a baking sheet (approx. 32 x 39 cm) thoroughly and dust with a little flour. Set aside.

Prepare rhubarb

Clean, wash and cut 1125 g rhubarb into 1-2 cm long pieces. Set aside.

Prepare Streusel

Place 250 g flour, 100 g sugar and 170 g butter in pieces in the mixing bowl and process into crumbles for 20 sec/speed 4. Refrigerate until ready to use.

Prepare batter

Place 250 g butter, 200 g sugar and 1 pinch of salt in the mixing bowl and mix until fluffy for 2 min/speed 3.

Add eggs

Add 4 eggs (size M) one after the other and mix in for 30 sec/speed 3.

Mix flour and baking powder

Mix 400 g flour and 2 tsp baking powder, add to the mixing bowl and briefly stir into the dough with the Meistermix Patix dough knife. 2 min/kneading stage

Spread dough and top

Spread the dough evenly on the prepared baking sheet. First distribute rhubarb pieces, then streusel evenly on top.

Bake

Bake rhubarb cake in a preheated oven (electric oven: 200 °C/fan oven: 175 °C/ gas: level 3) for 45-50 minutes, then let cool.

Serve

Sprinkle with powdered sugar and serve as desired.
