Description

This zucchini cream soup is a light and vegetarian dish, ideal for summer. Prepared with fresh ingredients such as zucchini, onions and potatoes, it is ready in about 40 minutes. The soup is refined with sour cream and garnished with basil. Perfect as a starter or light main course.

Ingredients (9 ingredients)

  • 2 Stück medium-sized Onions
  • 2 Stück Potatoes
  • 500 g Zucchini
  • 2 Eßl. Oil
  • 1 l Vegetable broth
  • Salt
  • Basil
  • white Pepper
  • 0.5 Becher Sour cream

Preparation (8 steps)

Chop onions and potatoes

Put 2 medium-sized onions and 2 peeled potatoes into the mixing bowl and chop for 3 sec./speed 5.

Chop zucchini

Clean 3 zucchinis (approx. 500g), dice and add to the onions and potatoes in the mixing bowl.

Sauté vegetables

Add 2 tablespoons of oil and sauté for 3 min./120°C/speed 1.

Cook soup

Add 1 l vegetable broth and cook for 20 min./100°C/speed 1.

Blanch zucchini

Cut half a zucchini into slices and blanch in salted water.

Puree soup

30 sec/Speed 8-10

Puree soup for 30 sec./speed 8-10.

Season and refine soup

Season with salt and white pepper. Add half a cup of sour cream and stir for 10 sec./speed 3.

Arrange

Place the blanched zucchini slices on the soup and sprinkle with basil.
