Description

This cloud cake without flour is a light and fluffy cake that is ideal for coffee parties or as a dessert. With curd, eggs and vanilla pudding powder, it is gluten-free and low in lactose. Preparation takes about 60 minutes and yields 12 servings. Perfect for anyone looking for a simple and festive cake.

Ingredients (6 ingredients)

  • 800 g Curd
  • 6 Stück Eggs
  • 150 g Sugar
  • 1 Päckchen Pudding powder (vanilla flavor)
  • 1 EL Lemon juice
  • 1 Prise Salt

Preparation (6 steps)

Separate eggs

Separate the 6 eggs. Place the egg whites in a separate, grease-free bowl and refrigerate. Prepare the egg yolks in another bowl.

Mix curd, sugar and egg yolks

Put 800g curd, 150g sugar and the 6 egg yolks into the mixing bowl and mix for 30 sec./speed 3.

Add pudding powder and lemon juice

Add 1 packet of pudding powder (vanilla flavor) and 1 tbsp lemon juice and mix for another 20 sec./speed 3.

Whisk egg whites until stiff

Thermomix® Setting

Insert the butterfly. Put the chilled 6 egg whites and 1 pinch of salt into the mixing bowl and whisk until stiff for 3 min./speed 3.5. Remove the butterfly.

Fold in egg whites

Carefully fold the egg whites into the curd mixture with a spatula. Do not stir in the Thermomix anymore.

Baking

Pour the mixture into a greased springform pan (26 cm diameter) and bake in a preheated oven at 170°C top/bottom heat for approx. 40 minutes.
