Description

I love preparing this fresh pasta without gluten! It's an excellent alternative for those who avoid gluten, and the result is truly delicious. The combination of rice flour, corn flour, and starches gives a perfect texture, both firm and pleasant in the mouth. You can use them for all kinds of dishes, from the simplest to the most elaborate. Letting the pasta dry is crucial for good cooking. Feel free to vary the shapes: tagliatelle, spaghetti, or even penne! A real treat for the whole family.

Ingredients (5 ingredients)

  • 200 g rice flour
  • 200 g corn flour
  • 200 g potato starch
  • 200 g corn starch
  • 8 g guar gum

Thermomix® Setting
20 sec/Speed 4

Put 200 g of rice flour, 200 g of corn flour, 200 g of potato starch, 200 g of corn starch and 8 g of guar gum in the Thermomix bowl. Mix for 20 Sek./Stufe 4.

Dough formation

Thermomix® Setting
2 min/Kneading speed

Mix for 2 Min./Knetstufe to form a firm and smooth dough. If the dough is too dry, add a little water, one tablespoon at a time, until you get the desired consistency.

Preparation of the pasta

Remove the dough from the Thermomix. Use a pasta machine to form the pasta of your choice (tagliatelle, spaghetti, penne...). If you do not have a pasta machine, put a ball of dough between two sheets of parchment paper and spread with a rolling pin, then cut into thin strips.

Pasta drying

Let the pasta dry for at least 4 hours. This step is crucial to prevent the pasta from sticking during cooking.

Pasta cooking

8 min/212°F/Speed 1 100

Cook the pasta in a large volume of salted water for 8 Min./100°C/Stufe 1. Cooking time can be adjusted according to your taste. Drain and serve immediately.
