Description

This classic asparagus soup is a seasonal highlight in spring. Prepared with fresh asparagus, onions and celery, it is a light and vegetarian dish. Preparation takes about 40 minutes and yields 4 servings. Ideal as a starter or light main course.

Ingredients (10 ingredients)

  • 1000 g Asparagus, white
  • 1 Stück Onion
  • 0.25 Stück Celery root
  • 20 g Butter
  • 1 Prise Sugar
  • 1 Prise Salt
  • 10 Stück Peppercorns
  • 1000 ml Vegetable broth
  • 100 ml Cream
  • nach Geschmack Nutmeg

Preparation (10 steps)

Prepare asparagus

Peel the asparagus and cut off the ends. Set the asparagus heads aside. Do not throw away the asparagus peels and ends, they are needed for the stock.

Chop onion and celery

Place 1 peeled and quartered onion and 1/4 celery root in coarse pieces in the mixing bowl and chop for 3 sec./level 5.

Add 20 g butter and sauté for 3 min./120°C/level 1.

Add asparagus peels and sections

Add the asparagus peels and sections, 1 pinch of sugar, 1 pinch of salt and 10 peppercorns and sauté for 5 min./100°C/level 1.

Deglaze with broth and cook

Thermomix® Setting
20 min/212°F/Speed 1 212°F

Deglaze with 1 liter vegetable broth and cook for 20 min./100°C/level 1.

Pass stock

Pass the stock through a fine sieve and squeeze out the solid components well. Return the stock to the mixing bowl.

Add asparagus pieces and cook

Add the peeled asparagus pieces (not the heads!) to the mixing bowl and cook for 10 min./100°C/level 1.

Puree soup

30 sec/Speed 8-10

Puree the soup for 30 sec./level 8-10, slowly increasing the speed. Hold the lid firmly!

Add cream and asparagus heads

Add 100 ml cream and the asparagus heads and heat for 5 min./90°C/reverse rotation level 1.

Season the soup with salt, pepper and nutmeg and serve.
