Description

This creamy potato asparagus soup with fresh wild garlic is an absolute highlight in spring! I make it every year as soon as the first asparagus tips are on the market. The combination of the earthy potato, the fine asparagus and the spicy wild garlic is simply unbeatable. With the Thermomix® the preparation is very easy and fast. The soup is vegetarian and can be served as a starter or light main course. If you like, you can garnish it with crispy wild garlic chips and daisies - a real eye-catcher!

Ingredients (9 ingredients)

  • 2 Stück Onions
  • 500 g Potatoes
  • 2 EL Butter
  • 2 TL Vegetable broth (instant)
  • 600 g Asparagus
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 50 g Wild garlic
  • 200 g Whipping cream

Preparation (8 steps)

Chop onions

Thermomix® Setting
3 sec/Speed 5

Place 2 onions in the mixing bowl and chop for 3 sec./speed 5. If necessary, push down from the edge with the spatula.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp butter to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add potatoes and vegetable broth

Add 500 g peeled and diced potatoes and 2 tsp vegetable broth (instant) to the mixing bowl.

Add asparagus and cook

Thermomix® Setting
20 min/212°F/Speed 1 100

Add 600 g peeled and chopped asparagus, salt and pepper. Top up with 500 ml water and cook for 20 min./100°C/speed 1.

Add wild garlic

Roughly chop ½ bunch of wild garlic (approx. 50 g) and add to the mixing bowl.

Puree soup

Thermomix® Setting
30 sec/Speed 8-10

Puree the soup for 30 sec./speed 8-10, slowly increasing the speed.

Add cream and heat

Thermomix® Setting
3 min/176°F/Speed 2 80

Add 200 g whipping cream and heat for 3 min./80°C/speed 2. Season to taste and add more seasoning if necessary.

Serve

Pour the soup into bowls and garnish with wild garlic chips and daisies as desired.
