Description

This clafoutis with courgettes and olives is a recipe that I love to prepare in summer, when the courgettes are at their peak. The sweetness of the courgettes goes wonderfully with the salty taste of the olives and the grated parmesan, creating a perfect balance. It's a simple and quick dish to make, ideal for a sunny lunch or a light dinner. The preparation is made easier with the Thermomix®, which allows you to obtain a smooth and homogeneous dough in no time. Feel free to vary the cheeses for a different touch! This clafoutis is perfect for a vegetarian meal and can be enjoyed hot or warm.

Ingredients (13 ingredients)

  • 6 piece eggs
  • 40 cl liquid cream
  • 20 cl milk
  • 50 g flour
  • 40 g grated parmesan
  • 10 piece pitted olives
  • 2 pinch fine salt
  • 1 tour pepper mill
  • 4 piece courgettes
  • 4 cuil. olive oil
  • 1 clove garlic
  • 2 pinch fine salt
  • 1 tour pepper mill

Preparation (7 steps)

Preparation of courgettes

Wash the courgettes and cut them into slices. Set aside.

Chop the garlic

Thermomix® Setting
3 sec/Speed 7

Peel the clove of garlic and put it in the Thermomix bowl. Chop the garlic for 3 Sek./Stufe 7.

Cooking the courgettes

Thermomix® Setting
15 min/212°F/Linkslauf Speed 1 100 Reverse

Add the olive oil to the Thermomix bowl and sauté the chopped garlic for 3 Min./120°C/Stufe 1. Then add the courgette slices, 2 pinches of fine salt and 1 turn of the pepper mill. Cook for 15 Min./100°C/Linkslauf Stufe 1.

Cooling the courgettes

Transfer the cooked courgettes to a salad bowl and let cool.

Preparation of olives

Cut the pitted olives into slices and set aside.

Preparation of the clafoutis batter

Thermomix® Setting
20 sec/Speed 4

Put the 6 eggs, 40 cl of liquid cream, 20 cl of milk, 50 g of flour, 40 g of grated parmesan, 2 pinches of fine salt and 1 turn of the pepper mill in the Thermomix bowl. Mix for 20 Sek./Stufe 4.

Assembly and cooking

Preheat the oven to 180°C. Transfer the cooked courgettes to a gratin dish. Distribute the olive slices over the courgettes. Pour the egg mixture over the courgettes and olives. Bake and cook the clafoutis for about 40 minutes, until it is golden brown and well puffed up.
