Description

These cobblestones are a Christmas pastry from the Thermomix® with honey, almonds, candied lemon peel and Christmas spices. The preparation of the cookies takes about 120 minutes, of which 60 minutes are active working time. The recipe is ideal for the festive coffee table or as a sweet finger food. It is suitable for anyone who likes to bake traditional Christmas cookies.

Ingredients (14 ingredients)

  • 250 g Honey
  • 125 g Sugar
  • 3 g Ground cloves
  • 5 g Ground cinnamon
  • 0.5 Stück Grated peel of untreated lemon
  • 375 g Flour
  • 125 g Peeled, ground almonds
  • 50 g Candied lemon peel
  • 1 Stück Egg
  • 1 Stück Egg yolk
  • 8 g Potash
  • 250 g Powdered sugar
  • 1 Stück Egg white
  • 1 EL Cocoa powder

Boil honey and sugar

Put honey and sugar in the mixing bowl and boil for 5 min./100°C/speed 2 while stirring. Then let it cool down a little.

Add spices and lemon zest

Add ground cloves, ground cinnamon and grated lemon zest to the mixing bowl and stir for 10 sec./speed 3.

Mix and stir in flour and almonds

Thermomix® Setting
20 sec/Speed 3

Mix flour and almonds. Sieve all but 100 g of the flour-almond mixture into the mixing bowl and stir in for 20 sec./speed 3.

Add candied lemon peel, egg and egg yolk

Thermomix® Setting

Finely chop the candied lemon peel, add to the mixing bowl with the egg and egg yolk and stir in for 20 sec./speed 3 and fold into the almost cold mixture.

Dissolve and add potash

10 sec/Speed 3

Dissolve potash in cold water, add to the mixing bowl and stir for 10 sec./speed 3.

Incorporate the remaining flour mixture

Thermomix® Setting
2 min/Kneading speed

Add the remaining flour mixture to the mixing bowl and process with the Patix dough knife for 2 min./kneading stage to a smooth dough until it no longer sticks.

Roll out and cut out the dough

Roll out the dough 1 cm thick on a baking sheet lined with baking paper or cut out.

Baking

Bake in a preheated oven at 180 °C for about 25 minutes until light brown. Turn upside down onto the work surface and cut out various large, round “cobblestones” from the still warm cake.

Prepare the icing

Put powdered sugar and egg white in the mixing bowl and stir for 20 sec./speed 4. Add a little water if necessary until the desired consistency is reached.

Cover cobblestones

Cover the “stones” with the icing.

Marbling

Stir the cocoa powder into the remaining icing and use it to marble the white icing on the cobblestones. This has to be done quickly!
