Description

These mini Scottish pancakes, or pikelets, are a delightful treat for breakfast or brunch. I've been making these for my kids for years, and they always disappear in minutes! The batter comes together quickly in the Thermomix®, making it a breeze to whip up a batch on a weekend morning. They're light, fluffy, and slightly sweet, perfect with a dollop of cream or fresh fruit. This recipe is a great way to start the day with a smile. You can easily double the recipe for a larger crowd.

Ingredients (6 ingredients)

  • 1 cup self-rising flour
  • 0.25 cup sugar
  • 0.25 tsp baking soda
  • 1 piece egg, lightly beaten
  • 0.75 cup milk
  • 1 tbsp butter

Preparation (3 steps)

Combine dry ingredients

Add 1 cup self-rising flour, ¼ cup sugar, and ¼ teaspoon baking soda to the mixing bowl. Mix for 10 Sec./Stufe 4 to combine.

Add wet ingredients and mix

Thermomix® Setting
20 sec/Speed 3

Add 1 lightly beaten egg and ¾ cup milk to the mixing bowl. Mix for 20 Sec./Stufe 3 until smooth.

Cook the pikelets

Heat a skillet over medium heat. Lightly grease the surface with 1 tablespoon butter. Pour 1/8 cup of batter into the skillet. Cook until bubbles begin to appear on the surface of the batter; flip and continue to cook until lightly browned on the bottom, 1 to 2 minutes each side. Reapply butter to the skillet between batches.
