Description

This gnocchi oven vegetables is a straightforward and delicious dish that is perfect for a relaxed evening. I love how quickly it is prepared and how well the flavors harmonize. The gnocchi become nice and crispy in the oven, while the vegetables develop their full flavor. The creamy herb curd provides a fresh touch. Ingredients (11 ingredients)

  • 480 g Vegetable Ideas Swedish Style
  • 500 g Gnocchi, vegan (chilled section)
  • 1 tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • 400 g vegan curd alternative
  • 200 g Soy yogurt
  • 0.5 Bd. Parsley
  • 0.5 Bd. Chives
  • 1 pinch Salt
  • 1 pinch Pepper
  • 0.5 piece Lemon

Preparation (5 steps)

Prepare herbs

Wash the parsley and chives, shake dry and pluck the leaves or stalks. Then add to the mixing bowl and chop for 3 sec./speed 5. Transfer and set aside.

Prepare herb curd

Thermomix® Setting
10 sec/Speed 2 Linkslauf Reverse

Put vegan curd alternative and soy yogurt in the mixing bowl and stir for 15 sec./speed 3. Add two thirds of the chopped herbs, salt, pepper and lemon juice and stir in for another 10 sec./speed 2 on reverse. Transfer and chill.

Prepare vegetables and gnocchi

Let the vegetables thaw. Preheat the oven to 200 °C top/bottom heat (180 °C convection). Place vegetables and gnocchi on a baking sheet lined with baking paper and drizzle with olive oil and balsamic vinegar. Mix well.

Roast gnocchi and vegetables

Place the baking sheet in the preheated oven and roast for about 20 minutes until the gnocchi are golden brown.

Serve

Sprinkle gnocchi oven vegetables with the remaining herbs and serve with the herb curd.
