Description

This country chicken is a comforting and flavorful dish, perfect to enjoy with the family. The recipe, which I have adapted for the Thermomix®, is a simple way to prepare a traditional stew with a modern touch. The chicken thighs, cooked with onion, garlic, tomato and aromatic herbs, become incredibly tender and juicy. Potatoes and peas add a touch of color and texture, turning this dish into a complete and nutritious meal. Ideal for a weekday dinner or a festive lunch, this country chicken is a safe bet for any occasion. Go ahead and try it and you will see how it becomes a favorite in your house!

Ingredients (13 ingredients)

  • 1 kilogramo skinless chicken thighs
  • 2 piece onions
  • 1 clove garlic
  • 1 hoja bay leaf
  • 3 piece tomatoes
  • 1 container white wine or poultry broth
  • 1 can peas
  • 3 piece potatoes
  • 4 tbsp oil
  • 1 tbsp chopped parsley
  • 1 tbsp oregano
  • 1 pinch salt
  • 1 pinch pepper

Preparation (6 steps)

Prepare the stir-fry

Thermomix® Setting

Peel the onions and garlic clove. Cut the onions into quarters and the garlic in half. Place in the Thermomix bowl and shred 3 sec./level 5. With the spatula, lower the remains from the walls of the bowl.

Sauté the vegetables

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the oil to the Thermomix bowl. Program 3 Min./120°C/level 1 to sauté the vegetables.

Brown the chicken

Thermomix® Setting
5 min/Varoma/Giro a la izquierda/Velocidad cuchara Varoma Reverse

Add the skinless chicken thighs, the garlic cut in half and the bay leaf to the bowl. Program 5 Min./Varoma/Turn to the left/Spoon speed to brown the chicken.

Add the liquid and cook

Thermomix® Setting
20 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Add salt to taste, the tomatoes cut into pieces, the oregano, the chopped parsley and the glass of white wine or poultry broth to the Thermomix bowl. Program 20 Min./100°C/Turn to the left/Spoon speed.

Add the potatoes and peas

Thermomix® Setting
5 min/194°F/Giro a la izquierda/Velocidad cuchara 90 Reverse

Add the peeled and diced potatoes (previously cooked in salted water until slightly tender) and the drained peas to the Thermomix bowl. Program 5 Min./90°C/Turn to the left/Spoon speed. Stir gently with the spatula to integrate the potatoes and peas without them falling apart.

Serve

Let it rest for a few minutes so that all the ingredients take on flavor and the heat from cooking. Serve hot.
