Description
This Asian vegetable soup from the Thermomix® is quick to prepare with vegetable broth, soy sauce, fresh vegetables and optional shrimp. Curry paste provides the typical Asian flavor. The recipe is ready in 25 minutes and yields 2 servings. Ideal as a light appetizer or quick main course, also in the vegan version.

500 ml Vegetable broth

2 EL Soy sauce

150 g Vegetables (e.g. zucchini, carrots, peppers)

nach Geschmack Pepper

6 Stück Shrimp

1 EL Curry paste
Preparation (4 steps)
Prepare vegetables
Wash the vegetables as needed and cut into bite-sized pieces.
Prepare soup
Put vegetable broth, curry paste and soy sauce into the mixing bowl and heat for 10 min./100°C/level 1.
Add vegetables
Add the prepared vegetables and shrimp to the mixing bowl and cook for another 5 min./100°C/reverse rotation level 1.
Season and serve
Season the soup with salt and pepper and serve immediately.
