Description

This simple buttermilk cake with coconut flakes is a moist and delicious cake classic. The preparation is straightforward and quick with the Thermomix®. Ideal for coffee gatherings or as a sweet surprise in between. The cream makes the cake particularly juicy and keeps it fresh for several days. Perfect for those who like it uncomplicated and delicious.

Ingredients (11 ingredients)

  • 3 Stück Egg(s)
  • 250 g Sugar
  • 500 ml Buttermilk
  • 500 g Flour
  • 2 Pck. Baking powder
  • 200 g Desiccated coconut
  • 75 g Sugar
  • 1 Pck. Vanilla sugar
  • 2 Becher Cream
  • Fat
  • the baking sheet

Preparation (8 steps)

Beat eggs and sugar until fluffy

Add 3 eggs and 250 g sugar to the mixing bowl and beat for 3 min./speed 4 until fluffy.

Stir in buttermilk, flour and baking powder

Thermomix® Setting
30 sec/Speed 3

Add 500 ml buttermilk, 500 g flour and 2 packets of baking powder to the mixing bowl and stir for 30 sec./speed 3. Scrape down the sides with the spatula and stir for another 10 sec./speed 3.

Spread the dough on a baking sheet

Spread the dough on a greased baking sheet or one lined with baking paper. If necessary, grease the baking sheet with some fat.

Prepare coconut flake mixture

Mix 200 g desiccated coconut, 75 g sugar and 1 packet of vanilla sugar in a bowl.

Sprinkle coconut flakes on dough

Spread the coconut flake mixture evenly over the dough.

Bake cake

Bake in a preheated oven at 160°C for approx. 30 minutes until golden brown.

Lightly whip cream

Thermomix® Setting

Add 2 cups of cream to the mixing bowl with the butterfly whisk and lightly whip for 1 min./speed 3.5 until slightly thicker. Keep an eye on the cream so that it does not become too stiff.

Spread cream on cake

Spread the lightly whipped cream over the still-hot cake. The cream will soak in completely and keep the cake nice and moist for several days.
