Description

Rossini style pizza is a timeless classic of Italian cuisine, perfect for a casual dinner or an evening with friends. This homemade version, prepared with the help of our trusted Thermomix®, is even tastier and more genuine. The dough, left to rise for a long time, is light and digestible, while the topping with tomato sauce, mozzarella, hard-boiled eggs and mayonnaise creates an irresistible combination of flavors. An explosion of taste that will conquer everyone, young and old! Ideal for a Sunday lunch or a birthday party.

Ingredients (12 ingredients)

  • 300 g Type 0 flour
  • 1 g Fresh brewer's yeast
  • 180 ml Water
  • 8 g Fine salt
  • 10 ml Extra virgin olive oil (EVO)
  • 400 g Tomato sauce
  • 3 piece Eggs
  • 150 g Mozzarella
  • 50 g Mayonnaise
  • 10 ml Extra virgin olive oil (EVO)
  • 2 g Oregano
  • 5 g Fine salt

Preparation (10 steps)

Dough preparation

Pour 300 g of type 0 flour, 1 g of crumbled fresh brewer's yeast and 180 ml of cold water into the bowl. Knead for 3 Min./Kneading stage.

Addition of salt and oil

Thermomix® Setting
2 min/Kneading speed

Add 8 g of fine salt and 10 ml of extra virgin olive oil. Knead for another 2 Min./Kneading stage.

First leavening

Transfer the dough to a bowl lightly greased with extra virgin olive oil, cover with cling film and leave to rise in a warm place for about 10 hours.

Division and formation of the pizzas

After leavening, divide the dough into two equal parts. Form two balls and place them in bowls greased with oil. Leave to rise for another 3 hours.

Cooking the eggs

Put 3 eggs in the basket and fill the bowl with 500 ml of water. Cook for 8 Min./100°C/Speed 1.

Sauce preparation

In the clean bowl, pour 400 g of tomato sauce, 5 g of fine salt, 2 g of dried oregano and 10 ml of extra virgin olive oil. Mix for 5 Sek./Speed 3.

Spreading and seasoning the pizzas

Spread the pizza bases on lightly floured baking sheets. Season with the prepared tomato sauce.

First baking

Cook one pizza at a time in a preheated oven at 280°C (or at maximum power) for about 5 minutes.

Addition of mozzarella and second baking

Remove from the oven, add 150 g of cubed mozzarella and cook for another 3-4 minutes, until the mozzarella has melted.

Final garnish

Remove the pizzas from the oven, add 50 g of mayonnaise and the sliced hard-boiled eggs. Garnish with fresh oregano to taste.
