Description

This Scottish Cream Fudge, also known as Scottish Tablet, is a delightful confection that's surprisingly easy to make with the Thermomix®. It's a sweet treat, perfect for satisfying your sweet tooth or gifting during the holidays. The combination of condensed milk, cream, and sugar creates a smooth, melt-in-your-mouth texture. I've been making this for years, and it's always a hit! It requires a bit of patience as it needs time to set, but the result is well worth the wait. This fudge is especially delicious during the winter months, offering a comforting sweetness.

Ingredients (6 ingredients)

  • 14 ounce sweetened condensed milk
  • 0.5 cup water
  • 0.5 cup light cream
  • 2 pounds white sugar
  • 0.25 cup unsalted butter
  • 0.5 teaspoon vanilla extract

Prepare the pan

Butter a 10x15 inch jellyroll pan and set aside. This step is done outside of the Thermomix to ensure the fudge sets properly.

Combine ingredients in Thermomix

Pour 1 (14 ounce) can of sweetened condensed milk, ½ cup of water, ½ cup of light cream, 2 pounds of white sugar, and ¼ cup of unsalted butter into the Thermomix bowl.

Cook the mixture

Cook the mixture for 20 minutes at 100°C on speed 2, stirring constantly with the spatula to prevent burning.

Add vanilla extract and stir

Add ½ teaspoon of vanilla extract and stir for 30 seconds on speed 3 until the mixture is no longer glossy.

Pour into pan and cool

Pour the mixture into the prepared pan and let cool until hard, about 6 hours. This step is done outside of the Thermomix to allow the fudge to set properly.
